- Heat the oven to 425°F. Line a large rimmed sheet pan with parchment paper if desired.
- In a small bowl, mix the oregano, garlic powder, salt, black pepper, lemon zest, and crushed red pepper flakes if using.
- Toss the potatoes and carrots with 1 1/2 tablespoons olive oil and half of the seasoning. Spread them on the pan and roast for 15 minutes.
- Do not rinse the raw chicken. In a separate bowl, toss the chicken, bell pepper, and onion with the remaining olive oil and seasoning. Add the mixture to the pan and spread everything into an even layer.
- Roast for another 15 to 20 minutes, stirring once, until the vegetables are tender and the thickest chicken pieces reach 165°F (74°C).
- Drizzle with the lemon juice, sprinkle with parsley if using, and serve.
Notes
Food safety: Do not rinse raw chicken. Wash hands, utensils, bowls, and surfaces after handling it. Cook chicken to 165°F (74°C).
Storage: Refrigerate leftovers within two hours, use within three to four days, and reheat to 165°F (74°C).
